Amino Acids

Amino Acids are available in beef, poultry, fish, eggs, dairy, soy, quinoa and buckwheat, nuts, seeds, beans, some grains. It can also be synthesized artificially. Generation of protein, repair, maintenance and growth of tissues etc. are sustained by amino acids. Out of twenty, nine of these need to be supplemented externally through food or dosage and are known as essential amino acids, namely, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine. Histidine, is considered semi-essential since the body is not always dependent on external supplement for its source.

Active elements

It consists of a basic amino group (-NH2), an acidic carboxyl group (-COOH) along with an organic group (side chain) unique to each type.

Generic use

Amino acids are used either alone or in combination, as flavour enhancers. Monosodium glutamate ( MSG ) is most frequently used in food industry. Glycine and alanine also enhance taste and flavour. Tryptophan, in association with histidine, is used to preserve milk powder., cysteine is used as an antioxidant for the preservation of fruit.

The dipeptide Aspartame (Phenylalanine and aspartic acid is roughly 200 times as sweet as sucrose and used as a low-calorie alternative to artificial sweetener.

It is also used to increase nutritional value, e.g. bread can be enriched with lysine, and soy products can be enriched with methionine. These along with glutamic acid are widely used in animal feeds.

Subjected to the US Dietary Supplement Health and Education Act of 1994 and are used frequently as dietary supplements without federal supervision.

FDA approved (1973) with limited use in dietary supplements.

Leucine received GRAS status.
